Quick Easy Healthy & Warm

Here’s an idea for something warm and simple, when time is limited or ya just don’t feel like cooking and you are wanting to eat light. This is great for anytime of the day, though I love it for dinner because that’s when I feel like eating lighter and want something quick, easy, healthy and warm when I return home from work.

I hear so often in my office how little vegetables people eat. One of my hacks is seaweed! For me it is a comfort food and is filled with so many vitamins and minerals. Remember, this is not “instead of vegetables”, it’s just some inspiration when time or energy is limited. Also, we all know I’m big soup enthusiast, especially, making my own bone broth, but sometimes we need a quick hack. My latest discovery...the Miso Ginger Soup in a box at Trader Joe’s. I am a huge proponent of using fresh organic miso so that you get the most active culture from it, but again, this is the quick hack for times when that is just what is needed. It has minimal and good ingredients. If it was organic, it would be Greeeat!

Ingredients that I have been using...of course feel free to modify if you are needing something a bit more hearty, for example, add an egg

TJ’s Miso Ginger Broth

Seaweed Sheets for sushi making

Tofu (Tj’s has a fine organic sprouted non-GMO option)

Black Sesame Oil

Cut the seaweed sheets with scissors like in the photo (I use 2 -3 sheets)

Heat up the broth (I encourage you to make it quite hot, but not boil, so as to preserve the Koji culture)

Put small cubes of tofu in broth while heating.

Pour over cut seaweed when done

and add a dash of sesame oil


That’s it! Simple and so yummy!
