My Car Camping Breakfast

     I am sharing my car camping breakfast here because I often share it with folks as a quick pre-made breakfast for those who "don't have time to make or eat breakfast".  I hear this OFTEN and I'm sorry, but a bar is not food!  Though I would rather you eat a bar than nothing for breakfast...baby steps sometimes, right!

     Baked Yams - cooked the night before

No need for refridgeration after cooked and ya get your sweet tooth nourished.  If I'm car camping I bring the ghee, if its for at home I will cut the yams before baking into large steak fry shape and put ghee on after so it melts on them.  Then they sit on the counter in a glass container and maybe get tossed into the toaster oven quickly before eating.

     Avocado

     Hard Boiled Eggs - cooked the night before 

Into a bowl, add the baked yam, sliced avocado, and sliced hard boiled egg.  Since you have cooked the yams and eggs already, in the morning all ya need to do is put them in a bowl, add the avocado and a pinch of salt and pepper, maybe a little paprika if you're feelin wild.  If you are not a fan of ghee for whatever reason, olive oil is great choice as well.

TCM hint:  Take the eggs out of the fridge right when you get up in the morning so that  by the time you are slicing them on top of the yam and the avocado, which are both already room temperature, your egg is room temp as well, so that you are not eating a cold breakfast.  When camping I put the yams and eggs in the sun while prepping the morning beverage.

For those who food prep, you can make a few yams and a batch of hard boiled eggs.
